Zucchini Pasta Salad

Zucchini is beneficial in reducing swelling around the eyes. It is full of carotenoid Beta-carotene which can be converted into vitamin A in the body. The Vitamin A helps in active cell development in the eyes, which enhances vision and helps in preventing age-related medical conditions such as macular degeneration. The high levels of vitamin A and C also rids the body of excess toxins and the high fiber content helps lower cholesterol.
Ingredients:
4 Zucchini - use a spiral slicer
1/2 cup black olives
handful of cherry tomatoes
1/4 cup peppers
Cubed choice of cheese
1/2 cup Italian dressing (use a bottled dressing or make you own with olive oil, balsamic, Italian herbs and seasoning)
Other optional ingredients: pepperoni, artichokes, carrots, fire roasted peppers, onion, nuts or anything else you would like to add.
Instructions:
Spiral the zucchini. Combine all the ingredients except the cherry tomatoes. Pour dressing over top and mix. Refrigerate for at least an hour. Before serving add the tomatoes.
